POTATO SCONES

INGREDIENTS: (Vegan)

POTATOES, 1 POUND
ALL PURPOSE FLOUR, 1 CUP
OLIVE OIL, 2 TBL
PARSLEY, 2 TBL
SALT, 1/4 TEA
BLACK PEPPER, 1/4 TEA

STEPS:

  • COOK POTATOES IN BOILING SALT WATER FOR 20 MINUTES
  • WHEN TENDER MASH THEN IN A CLEAN PAN
  • ADD FLOUR, OLIVE OIL, PARSLEY AND SALT & PEPPER
  • MIX INTO A SOFT DOUGH, THEN ROLL DOUGH ON A
  • WELL FLOURED CUTTING BOARD TO 1/4 INCH THICKNESS.
  • STAMP OUT ROUNDS ABOUT TWO INCHES WITH COOKIE CUTTER
  • LIGHTLY GREASE FRYING PAN OR GRIDDLE. COOK ABOUT
  • FIVE MINUTES ON EACH SIDE TURNING ONCE. BOTH SIDES
  • SHOULD BE GOLDEN BROWN. KEEP THE HEAT LOW.
  • YOU CAN SERVE WITH SOME MELTED BUTTER OR MARGARINE

    TIME TO PREPARE: 40 MINUTES (SERVES 6)
