POTATO SCONES
INGREDIENTS: (Vegan)
POTATOES, 1 POUND
ALL PURPOSE FLOUR, 1 CUP
OLIVE OIL, 2 TBL
PARSLEY, 2 TBL
SALT, 1/4 TEA
BLACK PEPPER, 1/4 TEA
STEPS:
COOK POTATOES IN BOILING SALT WATER FOR 20 MINUTES
WHEN TENDER MASH THEN IN A CLEAN PAN
ADD FLOUR, OLIVE OIL, PARSLEY AND SALT & PEPPER
MIX INTO A SOFT DOUGH, THEN ROLL DOUGH ON A
WELL FLOURED CUTTING BOARD TO 1/4 INCH THICKNESS.
STAMP OUT ROUNDS ABOUT TWO INCHES WITH COOKIE CUTTER
LIGHTLY GREASE FRYING PAN OR GRIDDLE. COOK ABOUT
FIVE MINUTES ON EACH SIDE TURNING ONCE. BOTH SIDES
SHOULD BE GOLDEN BROWN. KEEP THE HEAT LOW.
YOU CAN SERVE WITH SOME MELTED BUTTER OR MARGARINE
TIME TO PREPARE: 40 MINUTES (SERVES 6)
