BROCCOLI QUICHE

INGREDIENTS:

ALL PURPOSE FLOUR, 1 CUP
QUICK OATS, 1/3 CUP
BUTTER, 7 TBL: WATER COLD, 2-3 TBL
SWISS CHEESE, 1/3 LB.
BROCCOLI. 1 LARGE STEM
LEMON JUICE, 1/2 CUP
GARLIC, 2-3 CLOVES
EGGS, 3
SKIM MILK, 1 CUP

STEPS:

  • OATMEAL PIE SHELL: MIX FLOUR, OATS & CUT UP BUTTER
  • GRADUALLY BLEND IN WATER - MAKE INTO A BALL
  • ROLL FLAT ON FLOUR BOARD: FIT INTO A 9" PASTRY SHELL
  • BAKE AT 400, FOR TEN MINUTES, LET COOL
  • QUICHE: FILL SWISS CHEESE DIRECTLY AGAINST CRUST
  • STEAM BROCCOLI WITH GARLIC AND LEMON JUICE
  • PUT BROCCOLI (drained) DIRECTLY ON TOP OF CHEESE
  • BEAT EGGS AND MILK TOGETHER
  • POUR EGG MIXTURE ON TOP
  • BAKE AT 375, FOR 35 TO 40 MINUTES
  • NOTE: YOU CAN ADD ROASTED ALMONDS
  • NOTE: YOU CAN USE SOUR CREAM INSTEAD OF MILK
  • NOTE: GRUYERE OR SHARD CHEDDAR ALSO WORKS WELL

    Time to Prepare: 65 minutes (serves 6)
    ** SUGGESTED WINE: CHARDONNAY
