CHILLED CANTALOUPE-PEACH SOUP

INGREDIENTS:

PEACHES, 6 MEDIUM RIPE
WHITE WINE, 1/4 CUP
LEMON JUICE, 6 TBL
HONEY, 1 TBL
CINNAMON, 1/4 TEA
NUTMEG, 1/4 TEA
CANTALOUPE, 1 MEDIUM RIPE
ORANGE JUICE, 1 CUP
BLUEBERRIES, OPTIONAL TOPPING

STEPS:

  • PEEL AND PIT PEACHES
  • EVERYTHING IN THE SAUCE PAN EXCEPT
  • THE CANTALOUPE AND ORANGE JUICE
  • HEAT TO BOIL, SIMMER AND COVER FOR 10 MINUTES
  • IN BLENDER OR FOOD PROCESSOR PUREE PEACH MIXTURE
  • ADD 3/4 OF CANTALOUPE (EXCEPT SKIN AND SEEDS)
  • ADD ORANGE JUICE AND PUREE UNTIL SMOOTH
  • ADD REMAINING CANTALOUPE (DO NOT PUREE)
  • COVER AND CHILL
  • SERVE VERY COLD AND GARNISH WITH
  • BLUEBERRIES (OR OTHER BERRIES)
