POTATO, PANIR & PEA CURRY

INGREDIENTS:

POTATOES, 2 LARGE POTATOES: SESAME SEEDS, 1/2 TEA
MUSTARD SEEDS, 1 TEA: TURMERIC, 1/2 TEA
BUTTER, 1 TBL: CLOVES, 1/2 TEA
CUMIN, 1/2 TEA: LEMON JUICE, 1/4 CUP
THYME, 1/8 TEA: COTTAGE CHEESE, 1 1/2 LARGE CURD
SALT, 1/2 TEA: PEAS, 3 CUPS
CAYENNE PEPPER, 1/2 TEA: GARLIC, 2 CLOVES
BLACK PEPPER, 1/2 TEA
CARAWAY SEEDS, 1/2 TEA

STEPS:

  • IN A LARGE SKILLET: MELT BUTTER, ADD SEEDS & GARLIC
  • ADD ALL SPICES EXCEPT SALT AND PEPPER(S)
  • COOK OVER MEDIUM LOW HEAT FOR SEVERAL MINUTES
  • OR UNTIL SEEDS BEGIN TO POP
  • ADD POTATOES, SALT AND PEPPER(S)
  • COOK MEDIUM-LOW SEVERAL MINUTES
  • ADD 1/2 CUP WATER AND COVER, LET COOK UNTIL
  • POTATOES ARE SOFT -- STIRRING OCCASIONALLY
  • ADD WATER IF DRYING OUT
  • ADD LEMON JUICE, PEAS, COTTAGE CHEESE
  • SIMMER 10 MINUTES

    TIME TO PREPARE: 70 MINUTES (SERVES 4)
