NOODLE PANCAKES

INGREDIENTS:

ANGEL HAIR PASTA, 6 OUNCES
EGGS, 3 LARGE
PARMESAN CHEESE, 1/2 CUP + 4 TBL
MILK, 1/2 CUP
ZUCCHINI, 1 1/2 LARGE
SALT (or salt substitute), 1/2 TEA
PEPER 1/2 TEA
OIL, 2 TBL
CARROTS, 4 OUNCES

STEPS:

  • BRING LARGE POT OF LIGHTLY SALTED WATHER TO A BOIL
  • COOK PASTA 2 TO 3 MINUTES UNTIL AL DENTE
  • REMOVE FROM HEAT AND DRAIN AND RINSE UNDER COLD WATER
  • COMBINE EGGES, 1/2 CUP CHEESE AND MILK IN MIXING BOWL
  • BEAT UNTIL WELL MIXED
  • STIR IN GRATED ZUCCHINNI (SAVE SOME ZUC FOR GARNISH)
  • SEASON WITH SALT AND PEPPER & STIR IN NOODLES
  • HEAT OIL IN LARGE SKILLET OVER MEDIUM HEAT
  • USE TONGS PLACE SMALL PANCAKE SIZE EGG MIXTURES INTO OIL
  • ADD EXTRA PANCAKES BUT AVOID OVERCROWDING
  • COOK ON BOTTOMS UNTIL BROWN (2-4 MINUTES)
  • FLIP WITH SPATULA COOK OTHER SIDE - REPEAT UNTIL ALL DONE
  • GARNISH WITH CARROTS, CHEESE
  • ALSO GARNISH WITH EXTRA ZUCHINI

    Time to Prepare: 30 minutes (serves 4)
