SPINACH GNOCCI

INGREDIENTS:

WHOLE WHEAT FLOUR, 3/4 CUP
SALT SEA, 1/2 TEA
BLACK PEPPER, 1/2 TEA
SPINACH FROZEN, 10 OUNCES
MUSTARD DRY, 1/2 TEA
NUTMEG, 1/2 TEA
EGGS, 2
BUTTER, 8 TBL
CHEESE GRATED, 1 1/4 CUP

STEPS:

  • MIX DEFROSTED SPINACH, FLOUR, 4 TBL BUTTER, 1 CUP
  • CHEESE, EGGS.
  • ADD PEPPER, SALT, MUSTARD, AND NUTMEG
  • ROLL INTO WALNUT SIZE BALLS ON FLOUR BOARD
  • COOK IN SALTED BOILING WATER (SIMMER 7-8 MINUTES)
  • PLACE IN LIGHTLY GREASED OVEN DISH (OVEN 350)
  • COOK WITH 2 TBL MELTED BUTTER, EXTRA CHEESE ON TOP
  • BAKE 25-30 MINUTES

    TIME TO PREPARE: 75 MINUTES (SERVES 6)
    ** SUGGESTED WINE: SANGIOVESE (CHIANTI)
