FRUIT SOUP

INGREDIENTS: (Vegan)

APPLE, 1 POUND
LEMON JUICE, 1 TEA & 1 TEA
CORNSTARCH, 2 TBL
GRANULATED SWEETENER, 1/4 TO 1/2 CUP & 2 TBL
RICE MILK, 1 1/4 CUP
GROUND ALMONDS, 1 TBL
SALT, 1/4 TEA
MARAGINE, 1 TEA
RICE, 1/3 CUP

STEPS:

  • DUMPLINGS: COMBINE MILK, ALMONDS, SALT AND LEMON
  • JUICE (1 TEA), MARGARINE, AND SWEETENER IN A SMALL SAUCE
  • PAN. BRING TO BOIL, REDUCE HEAT, AND SIMMER FOR 30
  • MINUTES. WHEN RICE IS COOKED IT SHOULD BE STICKY,
  • REMOVE FROM HEAT AND ALLOW TO COOL.
  • TO MAKE DUMPLINGS PRESS FLAT INTO FLAT DISK SIZE OF
  • A QUARTER, THEN UNMOLD. ADD TO FINISHED FRUIT SOUP
  • FRUIT SOUP: LARGE SAUCE PAN COMBINE FRUIT, 3 1/2 CUPS
  • OF WATER AND LEMON JUICE AND COOK ABOUT 15 MINUTES
  • UNTIL TENDER. PUREE COOKED FRUIT IN BLENDER, THEN
  • RETURN FRUIT TO SAUCEPAN. MIX CORNSTARCH, 2TBL OF
  • COLD WATER IN SEPARATE CONTAINER THEN ADD TO FRUIT
  • COOK STIRRING CONSTANTLY UNTIL SOUP THICKENS.
  • OKAY TO SUBSTITUTE SOY MILK, PEARS PEACHES OR PLUMS

    TIME TO PREPARE: 35 MINUTES (SERVES 5)
