POTATOES RED, 3 OR 1/2 POUND
EGGS, 3
FAT FREE MILK, 1/4 CUP
CHEDDAR CHEESE, 1/3 CUP
OREGANO, 1/4 TEA
FRESH BLACK PEPPER
STEAMED BROCOLLI OR CAULIFLOWER, 1/4 POUND
STEPS:
01) STEAM POTATOES & BROCOLLI UNTIL TENDER
IN A BOWL BEAT TOGETHER ALL OTHER INGREDIENTS
HEAT A PAN OVER SKILLET (NO STICK) WITH POTATOES
-- MEDIUM HEAT
POUR EGG MIXTURE OVER POTATOES, COOK STIRRING
OCCASIONALLY OR TILT PAN TO PREVENT EGGS FROM
SETTING UNEVENLY. WHEN EGGS ARE NEARLY DONE, LIFT
EDGE OF FRITTATA AND TILT PAN SO ANY UNCOOKED EGG
RUNS UNDERNEATH TO COOK.
TURN OFF HEAT, INVERT FRITTATA ONTO PLATE
TIME TO PREPARE: 30 MINUTES (SERVES 2)
