POTATO FRITTATA

INGREDIENTS:

POTATOES RED, 3 OR 1/2 POUND
EGGS, 3
FAT FREE MILK, 1/4 CUP
CHEDDAR CHEESE, 1/3 CUP
OREGANO, 1/4 TEA
FRESH BLACK PEPPER
STEAMED BROCOLLI OR CAULIFLOWER, 1/4 POUND

STEPS:

  • 01) STEAM POTATOES & BROCOLLI UNTIL TENDER
  • IN A BOWL BEAT TOGETHER ALL OTHER INGREDIENTS
  • HEAT A PAN OVER SKILLET (NO STICK) WITH POTATOES
  • -- MEDIUM HEAT
  • POUR EGG MIXTURE OVER POTATOES, COOK STIRRING
  • OCCASIONALLY OR TILT PAN TO PREVENT EGGS FROM
  • SETTING UNEVENLY. WHEN EGGS ARE NEARLY DONE, LIFT
  • EDGE OF FRITTATA AND TILT PAN SO ANY UNCOOKED EGG
  • RUNS UNDERNEATH TO COOK.
  • TURN OFF HEAT, INVERT FRITTATA ONTO PLATE

    TIME TO PREPARE: 30 MINUTES (SERVES 2)
    ** SUGGESTED WINE: ZINFANDEL
