ORANGE COUSCOUS WITH CHICKPEAS

INGREDIENTS: (Vegan)

COUSCOUS, 1 CUP
ORANGE JUICE, 1 1/4 CUP
CHICK PEAS, 1 CUP
SALT (or salt substitute), 1 TEA
RED PEPPER FLAKES (optional makes it spicy), 1/4 TEA
CILANTRO, 1/3 CUP

STEPS:

  • PREHEAT OVEN 350
  • PLACE COUSCOUS IN OVEN PROOF DISH TIGHT FITTING LID
  • POUR JUICE OVER COUSCOUS AND STIR
  • ALLOW MIXTURE TO STAND 15 MINUTES
  • THEN STIR IN SALT, CHICK PEAS AND RED PEPPER FLAKES
  • COVER DISH TIGHTLY WITH FOIL AND LID
  • BAKE 20 MINUTES
  • SPRINKLE CILANTRO ON TOP AFTER COOKING

    TIME TO PREPARE: 45 MINUTES (SERVES 4)
