CREAM OF ASPARAGUS SOUP
INGREDIENTS:
ASPARAGUS, 1 1/2 POUNDS
MILK, 2 CUPS
SALT, 1 TEA
BLACK PEPPER, 1/2 TEA
BASIL, 1 TEA
STEPS:
REMOVE STEMS AND STRINGS THEN STEAM ASPARAGUS
UNTIL TENDER.
PUREE THEM WITH HOT MILK (NOT SCALDING) UNTIL VERY SMOOTH.
ADD SEASONS TO TASTE
HEAT JUST BEFORE SERVING (DO NOT BOIL OR COOK)
** GREEN BEAN CAN BE SUBSTITUTED FOR ASPARAGUS
