CREAM OF ASPARAGUS SOUP

INGREDIENTS:

ASPARAGUS, 1 1/2 POUNDS
MILK, 2 CUPS
SALT, 1 TEA
BLACK PEPPER, 1/2 TEA
BASIL, 1 TEA

STEPS:

  • REMOVE STEMS AND STRINGS THEN STEAM ASPARAGUS
  • UNTIL TENDER.
  • PUREE THEM WITH HOT MILK (NOT SCALDING) UNTIL VERY SMOOTH.
  • ADD SEASONS TO TASTE
  • HEAT JUST BEFORE SERVING (DO NOT BOIL OR COOK)
  • ** GREEN BEAN CAN BE SUBSTITUTED FOR ASPARAGUS

    TIME TO PREPARE: 20 MINUTES (SERVES 3)
